Amaranth, Spirals – Chicken with Mushrooms

This recipe is dairy free and egg free.

Preparation time 20 minutes
Cooking time 30 minutes
Serves 6

Ingredients

1 x 250g (8.8oz) pkt Orgran Multigrain Pasta with Amaranth, Spirals
500g (16oz) chicken fillets
500g (16oz) mushrooms
1 leek
1 clove garlic
100g (3, 1/2 oz) bacon
3 tablespoons olive oil
1 tablespoon chopped fresh thyme

Method

  1. Preheat oven to 160°C (325°F).
  2. Prepare a 25cm (10¨) deep round casserole dish by spraying with cooking spray.
  3. Cook Pasta according to the directions on the packet.
  4. Spread the cooked pasta over the base of the prepared dish.
  5. Cut chicken fillets into small dice.
  6. Peel and slice mushrooms.
  7. Trim and thoroughly wash leek. Cut into thin circles.
  8. Peel and crush garlic.
  9. Trim fat from bacon and cut into small pieces.
  10. Pour 2 tablespoons oil into frying pan.
  11. Add chicken to pan and toss until chicken is cooked. Remove from pan and spread over pasta.
  12. Pour remaining oil into pan. Add leek, garlic and thyme and lightly sauté. Remove from pan and place over chicken.
  13. Add mushrooms to pan and lightly sauté. Place into casserole dish.
  14. Top with bacon.
  15. Place into moderate oven and cook until bacon is cooked and casserole is heated through.
