Potato with Amaranth

This recipe is egg free.

Preparation time 30 minutes
Cooking time 20 minutes
Serves 4-6 as a side dish

Ingredients

700g (23oz) potatoes
1 clove garlic
2 tablespoons olive oil
2 tablespoons Orgran 100% Amaranth Puffed Breakfast Cereal
¼ cup cream
1 cup evaporated milk
60g (2oz) bocconcini cheese
¾ cup grated tasty cheddar cheese

Method

  1. Preheat oven to 160ºC (325ºF).
  2. Prepare a 23cm (9¨) casserole dish by spraying with cooking spray.
  3. Peel potatoes and cut into small dice approx. (2cm (1 ¾ ¨).
  4. Steam potato until just tender. Put potato into casserole dish.
  5. Peel and crush garlic.
  6. Pour oil into a small frying pan.
  7. Add amaranth and garlic and cook until just starting to go brown.
  8. Pour cream, evaporated milk and bocconcini cheese into the bowl of an electric food blender. Blend until smooth. Pour over potato in casserole dish.
  9. Sprinkle garlic over potato.
  10. Sprinkle with cheese.
  11. Place into a moderate oven and bake for approx. 20 minutes or until golden brown and heated through.
