Potato with Amaranth
This recipe is egg free.
Preparation time 30 minutes
Cooking time 20 minutes
Serves 4-6 as a side dish
Ingredients
700g (23oz) potatoes
1 clove garlic
2 tablespoons olive oil
2 tablespoons Orgran 100% Amaranth Puffed Breakfast Cereal
¼ cup cream
1 cup evaporated milk
60g (2oz) bocconcini cheese
¾ cup grated tasty cheddar cheese
Method
- Preheat oven to 160ºC (325ºF).
- Prepare a 23cm (9¨) casserole dish by spraying with
cooking spray.
- Peel potatoes and cut into small dice approx. (2cm (1 ¾
¨).
- Steam potato until just tender. Put potato into casserole
dish.
- Peel and crush garlic.
- Pour oil into a small frying pan.
- Add amaranth and garlic and cook until just starting to
go brown.
- Pour cream, evaporated milk and bocconcini cheese into
the bowl of an electric food blender. Blend until smooth.
Pour over potato in casserole dish.
- Sprinkle garlic over potato.
- Sprinkle with cheese.
- Place into a moderate oven and bake for approx. 20 minutes
or until golden brown and heated through.
