Lemon-sultana Muffins with Amaranth

Ingredients
1 x 375g (13.2oz) pkt Orgran
Lemon Poppy Seed Muffin
Mix
2 tablespoons Orgran
100% Amaranth Puffed
Breakfast Cereal
150ml (5fl oz) water
1 egg
1 tablespoon golden syrup
¼ teaspoon bicarbonate of soda
½ cup natural sultanas
Method
- Preheat oven to 180°C (350°F).
- Prepare a muffin tray (6cm, 2.5¨ size) by spraying
with cooking spray. Line base of muffin cups with baking paper
circles.
- Place muffin mix, amaranth, water, egg, golden syrup and
bicarbonate of soda into the small bowl of an electric food
mixer. Mix until ingredients are well combined.
- Stir in sultanas.
- Place tablespoons of mixture into prepared muffin tray.
- Place into a moderately hot oven and bake for approx. 20
minutes or until cooked when tested.
- When cooked, remove from oven and leave in tray for 5 minutes
before placing muffins onto a fine wire rack to cool.
