Lemon-sultana Muffins with Amaranth

Makes 11

Ingredients

1 x 375g (13.2oz) pkt Orgran
Lemon Poppy Seed Muffin
Mix
2 tablespoons Orgran
100% Amaranth Puffed
Breakfast Cereal
150ml (5fl oz) water
1 egg
1 tablespoon golden syrup
¼ teaspoon bicarbonate of soda
½ cup natural sultanas

Method

  1. Preheat oven to 180°C (350°F).
  2. Prepare a muffin tray (6cm, 2.5¨ size) by spraying with cooking spray. Line base of muffin cups with baking paper circles.
  3. Place muffin mix, amaranth, water, egg, golden syrup and bicarbonate of soda into the small bowl of an electric food mixer. Mix until ingredients are well combined.
  4. Stir in sultanas.
  5. Place tablespoons of mixture into prepared muffin tray.
  6. Place into a moderately hot oven and bake for approx. 20 minutes or until cooked when tested.
  7. When cooked, remove from oven and leave in tray for 5 minutes before placing muffins onto a fine wire rack to cool.
