Amaranth, Spirals – Curried Mince

Preparation time 25 minutes
Cooking time 40 minutes
Serves 4-6 with salad

Ingredients

1 x 250g (8.8oz) pkt Orgran Multigrain Pasta with Amaranth,
Spirals
1 red onion
1 clove garlic
2 tablespoons olive oil
500g lean minced beef
2 large carrots
1 tablespoon curry powder
½ teaspoon ground cumin
2 tablespoons finely chopped fresh coriander
1 tablespoon lime juice
1, ½ cups vegetable stock
4 eggs
1 cup evaporated milk
½ cup Orgran All Purpose Crumbs
1 tablespoon Orgran 100% Amaranth Puffed Breakfast Cereal,
1 cup grated tasty cheese

Method

  1. Preheat oven to 160°C (325°F). Prepare a large casserole dish by spraying with cooking spray.
  2. Cook pasta according to the directions on the packet.
    Spread over base of prepared dish.
  3. Peel and finely chop onion.
  4. Peel and crush garlic.
  5. Pour oil into a large frying pan. Add onion and garlic. Saute until onion is just cooked. Set aside.
  6. Add mince to pan and cook until mince is cooked. Add onion and garlic to mince. Cook for 1 minute. Spread over pasta.
  7. Peel and chop carrots. Steam until soft.
  8. Place cooked carrot into an electric blender. Add curry powder, cumin, coriander, lime juice, vegetable stock, eggs and evaporated milk. Blend until smooth.
  9. Pour carrot sauce over mince.
  10. Place crumbs and amaranth into a small bowl. Mix together. Sprinkle over sauce.
  11. Sprinkle grated cheese over crumbs.
  12. Place into a moderate oven and cook for approx. 30 minutes or until heated through and brown on top.
