Cauliflower with amaranth

This very old recipe like cauliflower au gratin with a modern touch using Orgran Amaranth.

Preparation time 20 minutes
Cooking time 20 minutes
Serves 6 as a side dish

Ingredients

½ small cauliflower
¼ cup olive oil
3 tablespoons Orgran Plain Flour
2 egg yolks
600ml (20fl oz) milk
½ cup evaporated milk
½ cup Orgran All Purpose Crumbs
1 tablespoon Orgran 100% Amaranth Puffed Breakfast Cereal
1 teaspoon mustard powder
¾ cup grated tasty cheddar cheese

Method

  1. Preheat oven to 160°C (325°F).
  2. Prepare a 23cm (9¨) casserole dish by spraying with cooking spray.
  3. Cut cauliflower into small pieces. Steam until just tender. Place over base of prepared casserole dish.
  4. Pour oil into a large microwave safe jug.
  5. Stir flour into oil in jug. Microwave on high for 30 seconds and stir.
  6. Place egg yolks into a small bowl. Beat with a fork. Pour milk and evaporated milk in with egg yolks.
  7. Gradually stir milk and yolks into flour and oil in jug.
  8. Microwave on high for 1 minute and stir. Continue to microwave on high for 1 minute and stir until sauce thickens. Pour sauce over cauliflower in dish.
  9. Place crumbs into a small bowl. Stir in amaranth and mustard. Sprinkle over cauliflower.
  10. Top with grated cheese.
  11. Place into a moderate oven and cook for approx. 20 minutes or until heated through and golden brown.
