Amaranth and Apricot Bar

1/2 cup flour
3/4 cup puffed amaranth
1/2 cup rolled oats
1/4 cup shredded coconut
1/2 cup sultanas
3/4 cup chopped dry apricots
1/4 cup sunflower seeds
2 tablespoons honey
4 tablespoons margarine
2 eggs
1/4 cup apple juice

Mix all ingredients, rest 30 minutes. Spoon into a greased Swiss roll pan and cook for 1 hour in moderate oven.
Cut into 14 bars while hot and leave to cool in pan.

AMARANTH DATE SLICE

1 cup flour
1 cup puffed amaranth
1/2 cup rolled oats
1/2 cup orange peel
1 cup chopped dates
1/2 cup chopped peanuts
1/2 cup raw sugar
4 tablespoons margarine
2 eggs
3/4 cup apple juice
1 teaspoon vanilla

Mix all ingredients, rest 30 minutes. Spoon into a greased Swiss roll pan and cook for 45 minutes in moderate oven.
