Amaranth and Spinach

This recipe is a dairy free and egg free.

Preparation Time 10 minutes
Cooking Time 20 minutes
Serves 2

Ingredients
1 x 250g (8.8oz) pkt Orgran Multigrain Pasta with Amaranth, Spirals
120g (4oz) baby spinach leaves
4 sachets Orgran Sweet Corn Soup Mix
1 red onion, peeled and finely chopped
800ml (26floz) water
1 tablespoon finely chopped fresh mint

Method

  1. Cook pasta according to the directions on the packet.
  2. Place spinach into a steamer. Steam until just changing colour.
  3. Place soup mix, onion and water into an electric food blender. Blend to combine ingredients. Pour into a medium sized saucepan and cook over a gentle heat, stirring continuously until soup is cooked.
  4. To serve, place pasta into a large serving bowl. Sprinkle with chopped mint. Add spinach and top with hot soup.
  5. Reheat in the microwave before serving as required.
